Ah, strawberry spoon cake.

Popularized by a recipe in the New York Times, this not-quite a cake, not-quite a cobbler combo is a surefire way to impress everyone at your summer barbecue or dinner party.

Plus, it’s super easy to make and is meant to be served with a spoon which makes it totally no-fuss, which is what we’re all about here!

What is strawberry spoon cake?

Picture a cake that’s served in a bowl with a spoon, combining a light cake batter with strawberries baked into it and on top of it.

That’s a strawberry spoon cake.

It was popularized in a recipe in the New York Times, but it’s a take on an older dish called “Essie’s cobbler,” and it also resembles a French clafouti.

Other names include a “Lazy Woman’s Cobbler” (though we’re going to change it to a Lazy Person’s Cobbler – equal opportunity here to be lazy in the kitchen!)

Ingredients you’ll need

  • strawberries, sliced (fresh are better, but if you have frozen, just defrost them first!)
  • coconut sugar
  • all purpose flour
  • 2% milk
  • butter, melted
  • baking soda
  • salt

How to make strawberry spoon cake

1. Preheat the oven to 350

2. Grease a 9 inch pie plate and set aside

3. Add 2 cups sliced strawberries and all of coconut sugar to a medium bowl and mix until strawberries are coated

4. Lightly smash strawberries with back of fork and let sit for 10 minutes

5. Add flour, milk, melted butter, baking soda, and salt to a medium bowl and mix until well incorporated

6. Add flour mixture to the pie pan and then pour strawberries and sugar on top

7. Bake for 20-25 min until golden brown

Tips & tricks for baking and serving

As mentioned, you should serve this with a spoon into bowls, rather than with a knife onto a plate as the consistency will be more cobbler-like.

To kick it up a notch, add some freshly ground cardamom or ginger on top after baking.

You can also use brown sugar instead of coconut sugar, and if you want to get crazy, add some other berries like blueberries or blackberries into the mix!
