Again, I prefer to use my classic buttercream frosting recipe to make these so they’re from scratch, as it’s super easy to make buttercream frosting, but you don’t have to.

You can use your own store bought frosting, but make sure it is relatively stiff and able to hold its shape rather than being a glaze type frosting that will flow off the cookies.

How to Make Chocolate Chip Cookie Sandwiches with Vanilla Frosting

Making chocolate chip cookie sandwiches with vanilla frosting is incredibly easy and has just a few steps.

First, you need to make the chocolate chip cookies using this soft chocolate chip cookies recipe.

The recipe makes 24 cookies, which would give you 12 cookie sandwiches so make sure you double or cut the recipe depending on how many you want to make.

Let the cookies cool almost completely, as otherwise the icing will melt a bit when you put it on the cookies.

If you want these warm and plan to eat them right away, you could get away with leaving the cookie a it warm, icing it quickly and then enjoying, but otherwise, completely cooled is best.

While the cookies are cooling, make the buttercream frosting using this recipe.

You want to make sure that the frosting is sturdier as opposed to thinner, as you want it to hold its shape and not drop out of the cookie sandwich.

I prefer to use a piping bag – these are my favorites – to put the icing on these cookies (or you could use a ziploc bag with the end cut off!), so I put the bag in a mug and then start dropping the icing in the bag.

Turn the cookies upside down so you’re going to ice the bottoms of them, and go to town in a circular motion putting the icing on one cookie.

If you don’t mind the look, you could also just spoon the frosting on the cookie, though it will look messier.

If you want a thicker sandwich, you can frost both cookies and then squish them together, or you can just frost one and then put the other one on top of it to complete the sandwich look.
